Carter-Hoffmann HL9-18 Specifications
The dual-compartment holding cabinet is designed to hold cooked food warm and ready for serving. Each compartment has separate heat controls so food can be held at two different temperatures. It is ideal for holding covered foods and uncovered crispy foods. It can be run with or without humidity. Active humidification is provided by a heating element placed in the water reservoir and the distribution of heated, humidified air by a precision engineered fan and duct system. 90% humidity can be attained, even at higher temperatures.
