While a hot plate replicates the burner from a range, it is small and portable. An induction heating
unit is also small and portable but
has the added advantage of having a cool, smooth surface. This makes it ideal for use in areas
where customers may come in contact
with cooking elements such as egg or omelet bars, catering lines, or cooking presentations.
Induction cooktops do require a special
type of pan with magnetic base to be used. This is how the food is heated.
