This prep table's top section holds eight sixth-size, 4-inch-deep polycarbonate pans, which are included, but if an operator wants to hold different pan configurations or deeper pans, this can be accomplished with adapter bars. To retain cold air and protect against contamination, a foam-insulated hood assembly with a built-in lid covers the pan area. Additional products can be stored in the base of this True TSSU-27-08-HC prep table on two corrosion-resistant, coated shelves. Because they are wire, the shelves promote uniform airflow through the gaps, and operators can adjust the shelves to accommodate different-sized product.
