The user friendly settings labeled proof, very moist, firm moist, and crisp allow you to adjust temperatures accordingly. You can fry chicken, then keep it crispy in this holding cabinet until ready to serve. It has spacious interior measurements of 66.5"H x 39.0"D x 29.5"W and can support 10 sheet pans, 20 steam table pans, and 10 2/1 gastronorm pans.
