4 reasons to love Moffat

1. Turbofan: Moffat offers their very own bi-directional fan system, which ensures even airflow and eliminates the need to rotate pans during the baking process. Not typically found in standard convection ovens, the fan changes direction every 90 seconds to provide better heat distribution. The fans have 2 speeds, a low speed for delicate products like muffins and French macarons, and a high speed for faster cooking of proteins and vegetables.

2. Moffat has the smallest footprint in the industry. Most of their full-size double door convection ovens are approximately 38” to 40” wide and can double stacked, ensuring the best results even in the smallest space. Moffat’s most popular model, the E32D5 full size unit is 28 7/8” wide, which saves around 12” of floor and hood space.

This is achieved by end loading the pans to bakery depth and building the racks to hold a sheet pan exactly, so there is no wasted space inside the cavity. With the 20 and 30 series units, all the components like the fan motors are contained within the unit.

3. Combi features: Turbofan models E32, E33 and E35 have several combi-like features including moisture injection (water injected steam at the push of a button), a core probe (ability to cook to desired internal temperature of any product) and multi-stage recipe programming. Although these models do not require drains, they are not capable of full steam and would not replace a steamer or full-range combi oven.

4. Moffat ovens are energy efficient. The full size electric (E32D5) and gas (G32D5) ovens are ENERGY STAR® qualified and most others are Energy Star rated for their low kilowatt usage. For this reason, these models typically do not perform well when packed with frozen product, except for the E35 because it is available in several electrical options (208V, 3 Phase or 220-240V).

The Turbofan fan system delivers greater power, delivering increased air volume and distribution of heat within the oven cavity. Core Temperature probe: For consistent and even cooking, the core temperature probe can be connected to the control panel, so the probe’s temperature setting becomes the display temp setting. Completion of cooking is determined when the CTP reaches a set temperature.

Multi-stage cooking: Turbofan units can be programmed up to 5 different stages with different time, temperature and moisture settings to seal in moisture and perfectly color and brown meals.

Moisture injection mode: Regulated moisture control settings ensure that the most difficult of dishes can be kept from drying out; loss from shrinkage is limited and succulent results are assured – and with no drainage required.

Key features for Cook ‘N’ Hold

After your Turbofan cooks items to the exact doneness, they can then be easily transferred to their companion proofer/holding cabinet to be held at temperatures between 150°F to 185°F. The results of your ribeye, pork butts and biscuits will improve significantly because the moisture stays in the holding chamber for longer. You can take advantage of having ready-serve meals close at hand, which works beautifully for buffets and catered services.

These companion proofer/holders are ideal for in-line placement of the E33T5 and E33D5 convection ovens, as these have a space-saving width of only 24”/ 610mm, which leaves room in the kitchen for more.

Ideal for bake off, par-bake and fresh dough products, the Turbofan P Series allows for thermostat control between 65°F to 105°F while the humidity level can also be adjusted to suit the product. Moffat proofers are designed for use with companion ovens or are available as standalone units. They can hold full size sheet pans and even half size pans with 3” spacing in between, and can go underneath the E32, G32 or E33 convection ovens to create an effective bake center. Ideal for French bread, baguettes, dinner and sandwich rolls, croissants, cinnamon buns and a range of par-bake products.

Ideally suited for vegetables, proteins and starchy food products, regeneration technology with Turbofan returns food from chilled or frozen to the best levels of cooked temperature, appearance, taste and texture.
