Advanced "switch air" airflow design: Perfect cooking results are achieved through a special patented reversible fan design, unique baffle system, and a durable motor that includes high temperature ball bearings. These features improve the flow of air in the cooking chamber to create even baking every time. The high performance fan moves the air in a figure 8 path. This is achieved by the air being pushed out of the back of the oven cavity in a diagonal direction and after 2 minutes, the fan motor automatically reverse the fan to move the air in the opposite direction. This allows the food to cook evenly.

The gasket is made of high temperature rubber material and is fastened into an airtight slot. The door itself is constructed of heavy duty material and designed for normal rugged use in a commercial kitchen.
